Swiss Meringue Buttercream

In Cape Town, we’re in the thick of winter but experiencing regular weather changes which as you all know means its flu and cold season. Snotty noses and high fevers have hit my home in full force with my daughters tag teaming over the past two weeks with terrible colds. That has resulted in lots of indoor home entertainment, which always leads to baking as more than anything else, we need freshly baked goods to keep our happy hormone levels at bay 🙂

Cream Cheese Frosting

As mentioned in my Red Velvet Cupcakes post, cream cheese frosting just simply perfects the taste and provides the perfect balance to the richness (if that’s a word) of the cupcake with its sweet and tangy (the good type of tang) and oh-so delectable flavour.

I’m not going to ramble too much…here you go 🙂

Ingredients:

– 100-120g softened butter

– 1 tub cream cheese

– 2 cups icing sugar

– 1 tsp lemon juice

– 1 tsp vanilla essence

 

Method:

– Simple….just whip it all together until well combined and voila!

Rainbow Cupcakes

Happy 2013 to all!!! Hope each and every one of you had a lovely break and was able to spend quality time with loved ones whether it was going away on vacation or simply staying at home and enjoying good company. My wish for my family, friends and readers is a 2013 filled with memorable moments, side-splitting laughter, happiness, contentment and success. Remember…if your day or year isn’t going as great as you’d hoped or you just feeling low on “happy hormones” you have the power to change it. I completely believe that your happiness is completely up to you (and our creator of course). It’s quite simple…if you want to be happy, you will be. White Chocolate Buttercream Frosting

The best part of any cupcake is definitely the frosting and there are just so many options and variations, from melted chocolate to traditional buttercream icing. To give the traditional frosting a bit of a twist I decided to try the White Chocolate Buttercream frosting, and here’s how I did it…

Ingredients:

125g butter

4 cups icing sugar

3 tbs milk

100g white chocolate (I used Cadbury Dream)

Method:

1. Melt the white chocolate in the microwave (remember to keep monitoring and stirring). Set aside.

2. Cream the butter with an electric mixer until soft.

3. Gradually add two cups of icing sugar and the milk, and mix until combined.

4. Add the rest of the icing sugar and mix thoroughly.

5. Lastly, stir in the white chocolate.

NB: Add more milk if the icing is too thick.

Remember to have fun with your piping and decorations!
