Roasted Banana Muffins

I’m sure many of you are just as shocked at how quickly this year is flying by, I mean good heavens, it’s February already?!

With my daughters growing up, equally as fast, I’ve been including them in most of my baking sessions, which has been fun, adorable, messy and oh my does it test my patience 🙂

Banoffee Pie

During the holidays, I must say, I didn’t bake as much as I thought I would. However, at the very start of my vacation, I gave this banoffee pie a go and wow it’s delicious, decadent but I must warn you that it is quite rich and therefore a modest slice will completely hit the spot. Doughnuts

Doughnuts…warm, soft and smothered in chocolate…this is definitely one of life’s greatest pleasures.

The doughnut culture has also recently fast tracked in South Africa, with the major names like Dunkin Doughnuts and Krispy Kreme and quite a few independent stores popping up all over the country.

This is the first time I attempted to make doughnuts and I will definitely keep experimenting with New recipes and variations because this like cookies is dependent on what your preference is, i.e. soft or doughy, etc. 

Ingredients

Recipe credit: Indian Delights

  • 2 eggs
  • 1 cup sugar
  • 1/4 cup melted butter
  • 1 cup buttermilk/yoghurt
  • 1/4 tsp bicarbonate of soda
  • 4 cups flour
  • 1/2 tsp salt
  • 4 tsp baking powder
  • 1 tsp nutmeg (optional)

Method:

  • Beat the eggs until frothy
  • Add the sugar, butter and buttermilk/yoghurt and beat well
  • In a separate bowl, sift the dry ingredients and slowly add to batter, mixing well.
  • Adjust the flour and liquid if required
  • Roll out the dough and press out into desired doughnut shape
  • Fry the doughnuts in deep, hot oil
  • Strain doughnuts once removed from oil on a paper towel
  • Decorate as desired: I coated the top with a milk chocolate ganache and sprinkles for the kids ofcourse 🙂 enjoy!

Chocolate-Overload Chocolate Squares

Festive season is here with a bang, well at least for the kids it is, my holiday kicks off in a few days time. As last week was filled with school parties and kiddie movie days, I decided to make this chocolate cake inspired by @saadzb Rocky Road Chocolate Cake.

My daughter had lots of fun decorating the cake with all sorts of chocolate goodies such as Astros, Kit-Kat and ofcourse every kids happy place – the land of colourful sprinkles.

Happy 2017!!!

Most who I’ve spoken have said that 2016 was a brutal year. With all that is and has happened – the heartbreaking tragedy that is Aleppo, the disgust that is Trump, etc. We are living in quite an…interesting time… Anyway let me not get into politics, 2016 wasn’t all that bad for me, I was blessed with another daughter who is the sweetest, most chilled and content baby ever! Becoming a family of four has also been quite….interesting (chaotic, completely insane and absolutely beautiful all at the same time).

Pepper Steak, Creamy Mushroom Sauce and Salsa Mash Potato

It’s that time of the year when dinner parties, casual get-togethers and all forms of quality time with friends and family keep our schedules jam-packed. A fun time indeed! For a lovely quiet Sunday lunch with my little family, I decided to try out this recipe which consists of a flavourful garlic salsa mash potato, tasty and succulent pepper steak, topped with a creamy mushroom sauce.
