For a little sweet treat today, I made hot cross cinnamon buns with caramel and chocolate.

I recently made this vanilla sponge cake, layered with passion fruit curd, sandwiched and topped with passion fruit mousse finished off with some berries and edible flowers.
So light and refreshing for those summer days!

I was feeling quite inspired in the kitchen to attempt new bakes and one of them was a go at the trendy new #CookieCake
Instead of the usual meringue topping I opted to make, again for the first time, a crème pâtissière.
Can’t wait to dig into the leftovers for breakfast!
