Chocolate Swiss Roll

Swiss roll, swiss roll…oh how intimidating you seem until you have the courage to give it a go and realise and its actually one of the easiest cakes to make. I saw this recipe posted by Mehnaaz Basha and it just looked delicious and quite quick and easy to make – when I attempted it, it was exactly that!

This swiss roll is airy, light and fluffy – everything you’d want from a swiss roll really πŸ™‚ After I posted a picture of it on Instagram, I’ve been getting requests for a tutorial and have finally included one on my Instagram – featured in the story highlights. It’s incredibly quick to make and just like any other cake, you need it to cool down before decorating, so build in time for the cool down. Just like any chocolate cake – you can be as adventurous as you want with the filling and decorations.

Ingredients:

  • 6 eggs
  • 2/3 cup caster sugar
  • 1 teaspoon vanilla essence
  • 1 teaspoon baking powder
  • 1/2 cup flour
  • 2 tablespoon cocoa powder
  • Pinch of salt

Method:

  1. Preheat the oven to 180C. Grease and line either one big or two smaller swiss roll pans with baking paper
  2. Sift flour, baking powder, cocoas and salt 3 times.
  3. Using an electric mixer, beat egg whites until stiff, then gradually add caster sugar and beat until glossy.
  4. Add the egg yolks and vanilla essence to the egg whites and beat until combined.
  5. Fold the dry ingredients into the egg mixture.
  6. Pour and smooth out the batter into the swiss roll tray(s).
  7. Bake in the preheated oven for 10-12 minutes or until a skewer popped into the cake comes out clean.
  8. Remove from the oven and while hot pop it onto a clean kitchen towel – the top of the cake, on the kitchen towel side.
  9. Remove the baking paper from the swiss roll.
  10. Holding onto the kitchen towel and swiss roll, along the long side, start rolling the swiss roll in the kitchen towel into the swiss roll shape and allow to cool in this position.
  11. Once cool, unroll the swiss roll and fill and decorate as desired. My suggestion is to spread a layer of chocolate ganache, then a layers of fresh cream and some chopped strawberries to cut through the sweet flavours. Once you’ve added your desired filling layers, roll the swiss roll back up and transfer onto your serving plate. Now it’s ready to decorate – I’ve topped with more chocolate ganache and strawberries but you could really go wild and decorate according to your preference.
