I know…once again it’s been quite a while…
With juggling work, kids, etc., etc. posting recipes has unfortunately fallen at the bottom of the never-ending to-do-list.
Inspiring me to continue however, is Voice of the Cape AKA VOCFM whom have kindly asked me to share recipes with their listeners each week.
Last week on the show, I shared my go-to chocolate chip cookie and oh does everyone need a go to chocolate chip cookie! I love this recipe because, if followed perfectly, you will have a buttery, chewy, chocolate chip cookie, with a chocolate chip in every bite π The great thing is, it takes just 10min to whip together!Β
Ingredients:
- 1 1/2 cups flour
- 1 tsp bicarbonate of soda
- 1/2 tsp salt
- 125g unsalted butter
- 1/2 cup light brown sugar
- 6 tblsp granulated sugar
- 1 large egg
- 1 tsp vanilla extract
- 2 1/4 cup chocolate chips
Method:
- Preheat the oven to 175C and line two baking sheets with baking paper or a silpat.
- In a medium bowl, sift the flour, bicarbonate of soda and salt together.
- In another large bowl, using an electric mixer at medium speed, beat together the butter, and sugars for approximately 2 minutes, until smooth.
- Add the egg and vanilla and mix on low speed until mixed in.
- Gradually add the flour mixture and mix in until just incorporated. Be careful not to over-mix.
- Now for the exciting part – add your chocolate chips and stir with a wooden spoon
- Using an ice cream scoop or spoon, drop the dough onto the prepared baking trays, 6 to 8 per pan, depending on the size you’re making – spread them carefully so they have enough space to spread.
- Bake the cookies, 1 sheet at a time, until the bottoms and edges are lightly browned and the tops feel firm when lightly touched.
- Small cookies bake 8-10 minutes.
- Large cookies bake 10-13 minutes.
- Allow the cookies to cool for 5 minutes on the baking trays before transferring it to wired racks to cool completely.
- This recipe makes 15 – 30 cookies, dependent on the size.
- The smell of these cookies baking is just heavenly! Enjoy!
