An all time favourite for kiddies parties are cupcakes, simply because the decorative options are endless and can be adapted to any theme.
I’ve made A LOT of cupcakes in my lifetime and this has by far been the best recipe! Quick and easy to make and just the perfect crumb texture and moistness – nothing worse than a dense and heavy cupcake!
My daughter and I love eating the batter too, that’s how divine it is! I hope you enjoy this recipe as much as I do and please do tag me in your pictures when whipping this up!
Ingredients:
- 175g self-raising flour
- 150g plain flour
- 125g unsalted butter – softened
- 250g caster sugar (best sugar brand is Natura Sugars!)
- 2 large eggs – at room temperature
- 125ml milk
- 1 teaspoon vanilla essence / 1/2 teaspoon vanilla extract
Method:
- Preheat the oven to 180 degrees celsius and fill a 12 cup muffin tray with cupcake holders.
- In a small bowl, sift the flours and set aside.
- In an electric mixer, beating at medium speed, cream the butter until smooth, then gradually add the sugar, beating until pale in colour and fluffy. Add the eggs, one at a time, beating until incorporated after each addition.
- Add the flour in three stages, alternating with the milk and vanilla essence. With each addition, be sure to beat until incorporated, careful not to over-mix.
- Scrape down the sides of the bowl, making sure all the ingredients are well incorporated.
- Scoop the batter into the cupcake holders, filling them up approximately 3/4 full.
- Bake in the oven for 18 minutes or until a skewer comes out clean.
- Remove from the oven and allow to cool in the tins for 15 minutes. Thereafter, remove the cupcakes from the tin and place them on a wire rack to cool completely.
- Once completely cool, they are ready to be frosted and decorated as you desire!

Is any substitute for self raising flour?? In my area self raising flour is not available to buy
