Best Vanilla Cupcake

An all time favourite for kiddies parties are cupcakes, simply because the decorative options are endless and can be adapted to any theme.

I’ve made A LOT of cupcakes in my lifetime and this has by far been the best recipe! Quick and easy to make and just the perfect crumb texture and moistness – nothing worse than a dense and heavy cupcake!

My daughter and I love eating the batter too, that’s how divine it is! I hope you enjoy this recipe as much as I do and please do tag me in your pictures when whipping this up!

Ingredients:

  • 175g self-raising flour
  • 150g plain flour
  • 125g unsalted butter – softened
  • 250g caster sugar (best sugar brand is Natura Sugars!)
  • 2 large eggs – at room temperature
  • 125ml milk
  • 1 teaspoon vanilla essence / 1/2 teaspoon vanilla extract

Method:

  • Preheat the oven to 180 degrees celsius and fill a 12 cup muffin tray with cupcake holders.
  • In a small bowl, sift the flours and set aside.
  • In an electric mixer, beating at medium speed, cream the butter until smooth, then gradually add the sugar, beating until pale in colour and fluffy. Add the eggs, one at a time, beating until incorporated after each addition.
  • Add the flour in three stages, alternating with the milk and vanilla essence. With each addition, be sure to beat until incorporated, careful not to over-mix.
  • Scrape down the sides of the bowl, making sure all the ingredients are well incorporated.
  • Scoop the batter into the cupcake holders, filling them up approximately 3/4 full.
  • Bake in the oven for 18 minutes or until a skewer comes out clean.
  • Remove from the oven and allow to cool in the tins for 15 minutes. Thereafter, remove the cupcakes from the tin and place them on a wire rack to cool completely.
  • Once completely cool, they are ready to be frosted and decorated as you desire!
