White Chocolate Mousse Eton Mess with Fresh Summer Berries

Exactly a month to go before I moonwalk into holiday mode. I seriously cannot wait for this break, I know so many are feeling precisely the same – in desperate need to just have a break and switch off for a while. 

Before we switch off completely and usher in 2017, we need to work our way through year end functions, summer evening soirées festive season prep – let’s face it, aside from manic deadlines and the general last minute work grind, it’s a fun time.

If you’re looking for a decadent, quick and easy dessert with a summery burst, I’ve got the perfect recipe for you.

This concoction sort of created itself this past weekend when I wanted to make a quick white chocolate mousse. To liven it up, I thought I’d give it a bit of a eton mess twist. This always works perfectly for individual desserts – which is totally the way to go these days, saves your dessert from looking horrid after two scoops and face it who wants to actually share dessert!

White Chocolate Mousse Eton Mess with Fresh Summer Berries

Servings: Yields 9 individual portions
Time: 20 minutes
Difficulty: Easy

Ingredients:
– 200 grams white chocolate
– 1 vanilla pod – split and seeds scraped out
– 1 1/2 cups fresh cream
– 1 punnet strawberries (chopped for layers within dessert and decoration)
– 100g raspberries
– 3 meringue nests crushed
– decoration (I topped with fresh cream, raspberries & strawberries) and grated Crunchie chocolate

Method:
1. Break the chocolate into pieces and place in a heatproof bowl, along with the vanilla seeds and 3 Tbls cream and melt this over a saucepan of barely simmering water. Alternatively, use a bain-marie double boiler as I did… (available on Yuppiechef)

2. Whip the remaining cream until soft peak consistency and allow white chocolate to cool slightly before folding in the whipped cream

3. Layer as follows: crushed meringue, mousse, berries – repeat as you see fit. Then top with whipped cream and garnish to your summer-cravings! Serve chilled.
