Caramel and Cherry Babka Topped with Cherry-Vanilla Glaze and Roasted Pistachios

We are diving head first, mouth-wide open into cherry season in South Africa and like so many other cherry-fans, I am here for it!

I’m serving you with another cherry inspired recipe, this time a rich, spicy and layered with flavours, this branded loaf is bound to be your new favourite bake. Its cherry-infused glaze, fruity filling and nutty crust means you can get away with serving up a slice any time of the day.

Caramel & Cherry Babka, Topped with Cherry-Vanilla Glaze and Roasted Pistachios

Ingredients:

For the caramel:

  • 200g caster sugar
  • 90g butter
  • 230ml cream, slightly warmed

For the Babka

  • 1 cup pitted and halved Cherry Time cherries
  • ½ cup warm water
  • 1 tsp golden caster sugar
  • 1 packet instant yeast
  • 1 egg, plus 1 extra yolk
  • ¼ cup oil
  • 2 tsp vanilla essence
  • 2 tbsp honey
  • 1 tsp salt
  • 260g bread flour
  • ½ tsp freshly ground nutmeg
  • egg wash (1 egg mixed with 1 tsp water)
  • ¼ cup pistachios, roasted

For the Cherry-Vanilla Glaze:

  • 75g butter, melted
  • 250g icing sugar
  • 5 tbsp milk
  • 1 tsp vanilla extract
  • ¼ cup pitted and halved Cherry Time cherries

To serve: chantilly cream

Method:

For the caramel, place the sugar in a saucepan on medium heat and allow to melt, stirring occasionally to distribute the heat evenly.
Once the sugar is liquid and amber in colour, remove from the stove and add the butter, whisking to combine.
Add the slightly warmed cream and whisk until completely combined, then pour into a container and allow to cool completely.
For the babka, in the bowl of an electric mixer fitted with a dough hook, combine the water, sugar and yeast and set aside for 5–10 minutes until frothy.
To the mixture add the eggs, oil, vanilla and honey, and mix until combined.
Add the salt, flour and nutmeg and knead the dough on medium speed for approximately 10 minutes, until it is soft and smooth.
Transfer the dough to a bowl brushed with oil and cover with clingwrap, allowing to rise until doubled in size (approximately 2 hours).
For the glaze, melt the butter in a saucepan, add the remaining ingredients except the cherries, and whisk to combine. Adjust to your desired consistency with more or less milk and icing sugar.
Add ¼ cup cherries and allow to infuse for 10 minutes, before straining to remove the fruit.
Prepare a loaf pan by spraying with non-stick spray or lightly greasing with oil, then lining with baking paper.
On a floured surface, roll the babka dough out into a rectangle. Evenly spread the caramel and 1 cup cherries across the dough, leaving a 1.2cm border along all edges.
From the shorter side, carefully roll the dough into a log. Using a sharp knife, slit the dough in two by cutting it down the middle lengthwise. Taking the two pieces, twist them around each other to form the babka twist.
Place the babka into the prepared pan and place it in a warm spot, free from drafts, and allow to rise for another 45 minutes. In the meantime, preheat the oven to 190°C.
Brush with egg wash (avoiding the caramel and cherry swirls) and lightly cover with foil to prevent over-browning in the oven. Bake for 25 minutes, remove the foil, and bake for a further 5–15 minutes.
Once removed from the oven, allow the loaf to cool for 10 minutes before transferring to a wire rack to cool completely.
While on the rack, pour over the cherry-infused glaze and top with roasted pistachios.

Slice and serve with chantilly cream. Yum!


Turkish Pide

Pide, the Turkish Flatbread has recently been all a rage, as it is the perfect solution for an easy meal or snack. Just like flatbread or pizza, the  toppings can be adapted according to your craving or preference. The base as mentioned, is a flat-bread of a similar style to pita, chapati, or western pizza crust.

As you need time for the dough to rise, you’d need to prepare this a few hours before serving.

Cinnamon Roll Pull Apart Bread

What a weekend it’s been, I’ve definitely baked to my heart’s content and have made up for my creative baking lull…well I’d say. On Saturday I whipped up I chocoholics ultimate cookie…triple choc chip! Keeping in tune with the chocolate theme, I mixed it up a bit and made a salted caramel chocolate cake. On Sunday I tried to steer away from chocolate, not that you could ever overdo it 🙂 and I attempted a banoffee roulade, which turned out great until I tried to roll it up – I killed it…literally! Poked holes into it which lead to caramel oozing out, it wasn’t pretty but it still tasted good! The final item on my weekend baking to-do list was a cinnamon roll pull apart bread….oh my goodness, what a perfect little treat for those wintery evening sweet cravings. My family seems to think it tastes like Cinnabon 🙂 I’d take that as a stamp of approval, right?  Continue reading

Flaky Roti

Roti…sigh…oh how I love you! The smell of it sizzling on a hot tawa (concave iron griddle used to fry roti‘s)…yummy! Shukran to my father AKA popsickles for buying me a tawa – it’s any roti-maker/roti-addict’s dream!

Roti is one of the many types of indian flat breads originating from the Indian subcontinent. In India it is a staple accompaniment to most of their meals….I could completely live on roti too, but gosh I’d have to say bye to any trace of a waist I have.

Of all variations, my absolute favourite type of roti is the deliciously crisp, flaky roti. I made a batch to accompany and complement my butter chicken dish on Sunday and knew I just had to share the recipe and method with you! There’s certain steps which need to be followed when making a roti, to achieve the flaky effect.

Ingredients:

4 cups cake flour

1/2 cup oil

1 tsp salt

1 1/2 cups lukewarm water

125g butter/margarine or ghee (clarified butter)

For frying:

1/2 cup oil

3 Tbsp butter/margarine

NB: instead of the above you could just fry your roti’s with ghee

Method:

Combine flour, salt and oil and rub together to form breadcrumb consistency.

Add water gradually until a soft pliable dough forms.

Dough will be soft but after allowing to stand covered for a while (approximately 30 minutes) the moisture will be absorbed.

Make balls and roll into a circle to approximately a saucer size.

Spread rolled out ball with butter/margarine/ghee and sprinkle with flour.

From the centre of the circle, make a slit using a knife.

Using both hands, pick up the two sides of the cut circle and roll into a long ‘sausage’

Roll up both ends of the sausage, one side clockwise and the opposite end anti clockwise (two circles will meet in centre)

Flip one circle on top of the other and press lightly

Repeat this procedure with each of the dough balls.

Allow the finished roti balls to rest or refrigerate for about 10-15 minutes before frying.

Melt butter and oil together if not using ghee to fry

Roll out roti on lightly floured surface

Heat an appropriately sized pan to fry roti

Use about 2-3 tablespoons butter-oil mixture to fry roti until it is golden on each side

After removing from pan lightly pat it between the palms of your hands so that roti can be fluffy.
