Chocolate Chip Muffins

With Cape Argus Pick n Pay Cycle Tour out the way and everything mellowing down, life is finally beginning to settle down. To say that I’ve been busy at work is an understatement, it has been absolutely manic, but thoroughly enjoyable (aside from being constantly exhausted 😉 ). Watching the thousands of cyclists lining up at the start line and basking in the infectious atmosphere from start to finish has definitely stung me with the cycling bug. Completing a Cycle Tour is definitely on my bucket list – stop laughing…I can do it! 😀 109km’s piece of cake…ok maybe I should just stick to the cake… 

On that healthy note, let me share with you this quick and easy chocolate chip muffin recipe 🙂

Whenever a recipe calls for chocolate chips, I always opt for chopped up Cadbury’s Dairy Milk. I literally sit with the huge slab of Dairy milk and chop away – it’s time-consuming but so much more divine than baking chocolate chips.

This recipe and muffins in general are great to whip up for a breakfast with friends and family, if you need something to keep the kids busy or just a bit of sweetness in your home.


– 3 cups flour, sifted

– 2 tablespoons baking powder

– 1/2 cup white sugar

– 2 cups chocolate chips

– 125g butter, melted

– 1 1/2 cups milk

– 1tsp vanilla essence

– 2 eggs lightly beaten


1. Preheat the oven to 160 degrees

2. Mix the flour, baking powder, sugar and chocolate chips in a medium-sized bowl


3. Mix the melted butter, milk, vanilla essence and eggs in a separate bowl

4. Combine the two mixtures and mix thoroughly. Fill 3/4 of the muffin holders with the batter


5. Bake for 20minutes
