Rainbow Cupcakes

Happy 2013 to all!!! Hope each and every one of you had a lovely break and was able to spend quality time with loved ones whether it was going away on vacation or simply staying at home and enjoying good company. My wish for my family, friends and readers is a 2013 filled with memorable moments, side-splitting laughter, happiness, contentment and success. Remember…if your day or year isn’t going as great as you’d hoped or you just feeling low on “happy hormones” you have the power to change it. I completely believe that your happiness is completely up to you (and our creator of course). It’s quite simple…if you want to be happy, you will be. Learn to appreciate what you have instead of dwelling on what you don’t.

On that colourful note, I’d like to introduce you to a fabulous option for kiddies birthdays or perhaps those days where you need a bit of fun and colour to jack up your “happy hormones”. For those of you who aren’t familiar with it, meet the Rainbow Cupcake


Isn’t it just a colourful dream? 🙂

It might look a bit daunting and complicated, but in actual fact (and I’m not exaggerating) it’s quite easy. All you need to do is make a simple batch of basic cupcakes, you could use my recipe which can be found here

After whipping this up, split the batter up into four equal portions or the number of colours you’ll be using. Add in your desired amount of food colouring (add in a bit at a time to determine how light or dark you’d like the colour to be).


Place your cupcake holders in a muffin tray and using a teaspoon, spoon each colour into the holders. Be careful not to mix the colours or overfill the cupcake holder.


Bake them for 20min in an oven preheated to 180 degrees.


They are now ready to be frosted with your favourite frosting, I used a vanilla buttercream frosting – I promise to post the recipe soon!  Alternatively you could use the White Chocolate Buttercream Frosting. Have fun decorating these colourful lovelies, perfect job for the kiddies.
