One of my many baking missions is to find the perfect choc chip cookie recipe. There are countless methods and takes on this “classic biscuit” leaving you with endless options, depending on your preference. They vary from crunchy to chewy and from sweet to salty. For me personally, as long as the choc chips are delicious and not “baking chocolate” I am satisfied 🙂 For this reason I always use chopped up Cadbury dairy milk when a recipe calls for some choc chips as it tastes divine and you’re able to decide their size.
While on this choc chip cookie mission, I stumbled upon this recipe which I thought was just FABULOUS! An oreo stuffed inside a choc chip cookie, now isn’t that just a chunk of heaven 🙂 I can’t believe it’s taken me this long to post this recipe. I actually tried this out two weeks ago 🙂
This recipe is also perfect for just an ordinary choc chip cookie – I split the batch into ordinary and oreo stuffed. This way you are able to accommodate those with a smaller sweet tooth 🙂 Enjoy!
Ingredients:
- 200g / 2 sticks softened butter
- 3/4 cup brown sugar
- 1 cup castor sugar
- 2 large eggs
- 1 Tbls vanilla essence
- 3 1/2 cups flour
- 1 teaspoon salt
- 1 tsp bicarbonate of soda
- 285g chocolate chips
- 1 box of Oreos (depending on the number of stuffed cookies you plan on making)
Method:
- Preheat oven to 175°. Cream butter and sugars until well combined.
- Add in eggs and vanilla essence until well combined.
- In a separate bowl mix the flour, salt and bicarb. Slowly add to wet ingredients along with chocolate chips until just combined.
- Take one scoop of cookie dough and place on top of an Oreo Cookie. Take another scoop of dough and place on bottom of Oreo Cookie. Seal edges together by pressing and cupping in hand until Oreo Cookie is enclosed with dough.
- Place onto a baking tray lined with baking paper or silpat and bake cookies 9-13 minutes or until cookies are baked to your liking. Let cool for 5 minutes before transferring to cooling rack.
- Now kick back, relax and Enjoy!
